The 5-5-5 Framework
If you’ve ever stared at an empty board wondering where to start, use this simple ratio. It keeps balance, color, and texture in check, every time.
Five Cheeses
Pick across textures and intensities:
- Soft: brie or double-cream
- Blue: gorgonzola or stilton (small portion)
- Semi-soft: fontina or young gouda
- Hard: aged cheddar, manchego, or pecorino
- Wildcard: truffle cheese, ash-ripened goat, or something locally seasonal
Five Meats
Aim for mild → bold and a few different shapes for folding:
- Prosciutto (ribbons)
- Soppressata (coins)
- Genoa or Calabrese salami (ruffles)
- Chorizo (smoky slice)
- Pepper-crusted or fennel salami (accent)
Five Accents
Color, crunch, and contrast:
- Sweet: honey or fruit jam
- Bright: cornichons or pickled onions
- Fresh: berries, grapes, or sliced pears
- Crunchy: almonds, pistachios, or candied walnuts
- Spreadable: fig jam, olive tapenade, or hummus
Layout & Styling Tips
- Anchor with cheese: Place cheeses first at opposite corners or in a triangle to frame the board.
- Build height with meats: Fold or ruffle slices for volume; stack coins slightly overlapping for texture.
- Fill the negative space: Tuck fruit, nuts, and crackers last so there are no gaps.
- Use odd numbers: 3 bowls, 5 clusters (odd groupings read as intentional).
- Color pops: Add herbs (rosemary, thyme) and a few seasonal fruits for contrast.
- Knife logic: Pre-slice or score hard cheeses; add cheese knives and small spoons where needed.
Portion & Sizing Guide
- Appetizer (pre-meal): ~70–100g cheese + 40–60g charcuterie per person
- Light meal (with bread/veg): ~120–150g cheese + 80–100g charcuterie per person
- Include ~6–8 crackers or bread slices per guest and at least one gluten-friendly option.
Dietary & Crowd-Pleaser Swaps
- Vegetarian: add marinated olives, grilled veggies, stuffed peppers, extra nuts, and dips.
- Dairy-light: lean into hummus, white bean dip, smoked salmon, and fresh veg.
